Quality International: "HACCP is the most suitable for food safety"
After giving a training on HACCP and ISO 22000, Quality International spoke to OIA about these issues and the importance of being trained.
From 21th to 25th of November, Quality International provided training on food safety, more specifically on HACCP and ISO 22000:2005. The courses, aimed primarily for professionals throughout the food industry (from primary production to marketing), was sponsored by Organización Internacional Agropecuaria (OIA).
"As always, we had a full approval by the participants. Already more than 1000 professionals trained by Quality International according to this methodology, in which for five days they receive training consisting of three courses which implies a very complete and current food safety training", said Luisa Caceres (Director Quality International) and Dr. Eduardo Erro, both leading trainers by International HACCP Alliance. Training is delivered openly, as well as, it can be requested "in plant".
The course was taught by Senior Consultant Dr. Erro, on behalf of Quality International, an organization dedicated to provide training and consultancy services on various issues, especially those related to food safety and quality. Quality International is a member of the International HACCP Alliance (USA), number one on HACCP training, and has instructors leaders certified by that organization.
- What were the main questions and general comments from the audience?
-What interested them most was the way in which it has been explained the topic and focused to the current reality of Latin American countries, where often Prerequisite Programs not met or maintain the requirement and importance that they require. The general comments of all participants were how practical the training was, without losing the essential theoretical concepts that all training leads. It was widely illustrated with lessons learned by the teacher (E. Erro) in his several years of experience in different countries of our continent.
- What is the importance of HACCP today?
-You can not think of a world of globalized in food trade, without a system to ensure the safety of them. Today, HACCP is the most appropriate tool to achieve that goal; however it is perfectly ... As long as it is managed with a methodical policy from the top management of companies. This system is built on a day to day, with effort, dedication and, above all, with awareness of what it takes to develop safe food.
- Why is essential for a business operator to be trained and up to date?
-In addition to what has been mentioned above, it is a moral and ethical necessity even of who prepares food. Turn, is essential because regulations overseas require them, where exports of our industries target. As well, it is increasingly required by the authorities of each country to keep up and compete in the globalized world.
- Towards points today where International HACCP Alliance? What are their main concerns about HACCP?
Both International HACCP Alliance as Quality International are focused increasingly in develop and disseminate successfully concepts of HACCP. It has been seen in many cases that there are no correct explanations or interpretations of both, that have caused HACCP becomes simply an administrative tool for compliance. By contrast, HACCP must be a dynamic concept, updated, modern and highly accurate, to fulfill its main objective: to make food safe and be able to prove it.
